Norb F. Conway started out as a part-time worker at a restaurant in Colorado Springs in 1944. With years of hard work, he bought the business in 1961.

Today, it’s still a family owned business with our famous hamburgers getting larger. Norb coined the phrase “One’s A Meal” which holds true even today. We continue to use only the finest ingredients in the preparation of our renowned hamburgers and cheeseburgers, as well as every item on our menu.

As a matter of fact Conway’s is listed as one of the “Five Best Hamburgers” in the Taste of America column by Michael and Jane Stems which is syndicated in over 250 newspapers nationwide. Conway’s Red Top has also been named the peoples #1 choice for the “Best Hamburger” category in the Gazette Telegraph’s annual dining survey.

In 1944 Colorado Springs was a small tourist town with a winter population of about 14,000 people. Camp Carson had just opened its gates and WWII was nearly over. Lou Marold, a Colorado native, thought that what his small town needed was a big hamburger. He created a “giant” burger; a hamburger so big it needed a special six-inch bun to fit the beef patty. Lou Marold and his partner Rex Lowe opened the Red Top next to Marold and Owens Liquor Store and Delicatessen in the 1300 block of South Nevada Avenue. A second location was opened in the alley off Pikes Peak Avenue just behind the Manhattan Broiler and Lounge, and next to the Gazette Telegraph newspaper office.

Norbert F. Conway became an employee of Red Top quite by accident when he was asked to fill in for one of the owners who became ill. Norb had some previous experience as a waiter and thought this part-time job would boost his income so he agreed. Thus began a new era for the Conway family and the people of Colorado Springs. What started out as a part-time job in 1944 became a stepping stone to the fulfillment of a life long dream of owning his own business.

In 1957 the Red Top was moved from the 1320 S. Nevada to 1520 S. Nevada to make room for the I-25 overpass. The new location had 52 stools and also offered curb service. By now the small family had grown from three to eight children. Shortly after the birth of their tenth child in 1960, Norb and Phyllis Conway were able to purchase the restaurant after more than 15 years of running the business for previous owners. By now the Conway kids had joined their Mom and Dad at Red Top after school and on weekends. Phyllis’ mother joined the family effort with her delicious soups, stew, chili, and pies.

In April 1977, the family name was added to the familiar “Red Top” and Conway’s Red Top opened its second location at 3589 N. Carefree Circle. In 1982 the third location was opened at 390 N. Circle Drive. Norbert Conway died in November 1983; his wife of forty-four years took the reigns as head of the family and business CEO. Phyllis continued to run the popular, thriving, family business until her death in 1994. The Conway family opened a fourth location in July of 1999 at 1228 East Fillmore.

We continue to serve the same hamburger of legendary proportions which prompted Dad to coin the phrase “One’s A Meal.” Our famous hamburger has gotten even larger over the years, with out sacrificing an ounce of quality. We continue to use only the finest ingredients in the preparation of our renowned hamburgers and cheeseburgers, as well as every item on our menu.

Adhering to the standards set by our parents has resulted in our inclusion as one of the “Five Best Hamburgers” in the Taste of America column by Michael and Jane Stems which is syndicated in over 250 newspapers nationwide. Conway’s Red Top has also been named the peoples #1 choice for the “Best Hamburger” category in the Gazette Telegraph’s annual dining survey.
